Ethylene is a natural chemical found in some fruits and vegetables.

Products that generate high amounts of ethylene can affect other nearby produce.

Ethylene stimulates ripening and can add to over-ripening in some produce.

Ethylene affects packaged and unpackaged products in the same way.

This is why it is important to know which products generate high amounts and which ones are sensitive to it.

For instance if you have citrus stored next to your salad mix the salad will go bad much faster.
